Asian Slaw

My parents' neighbor and dear friend, Marilyn, brought this salad over 7 or 8 years ago and I about fell into the bowl. I made it over Easter and thought I'd share it here because I about fell into the bowl again. I could make an entire meal out of it and if you want protein - just add chicken.

I'm sure various versions are floating around Pinterest, but anytime Marilyn shares a dish, I know I need look no further.

In my mind, Ramen is broke college kid food - at 10 for $1.00, it was all I could afford so it brings back fond memories when I make this salad. And yes, DH likes this too. 😊

On Good Friday I fixed this salad, grilled salmon, sliced a tomato, added an avocado and that was dinner and it paired perfectly with our Easter Ham on Sunday. We also love it with anything we grill.


Asian Slaw

3 packages beef flavored Ramen noodle mix (use 3 pkgs seasoning and 2 pkgs noodles)
2 (8.5 oz) package slaw mix ) Broccoli Slaw
1 C sliced almonds, toasted
1 C sunflower seed kernals
3 green onions, chopped
1/4 C sugar
3/4 C + 2 Tbsp vegetable oil
1/3 C + 2 Tbsp white vinegar

* Remove flavor packets from packages, set aside. Crush 2 packets of noodles into bottom of a large bowl. Top with slaw mix. Sprinkle with almonds, sunflower seed kernals, and green onions.
Whisk together seasoning packets, sugar, oil, and vinegar. Pour over slaw. Mix. Cover and chill 24 hours. Toss before serving. Go back for seconds! Yum!


So easy. You could probably just use 2 packets of Ramen so you wouldn't have extra noodles left, but I think that 3rd seasoning packet makes a difference. I just pour hot water over those extra noodles and serve it to the chickens...they love it!

While that doesn't sound exactly like the ramen noodle salad I used to make, it just reminds me of how much I loved that salad! And if I ever took it to a gathering of the gals, I left with an empty bowl. One of the many problems of being single is after 2 or 3 servings, it's just not quite as good and this is something you just can't freeze. I often find it hard to 'size down' the recipe.

I too LOVE this slaw!! Husband not so much (he's a Montana rancher--meat and potatoes and maybe an iceberg lettuce salad thrown in!:)) so it doesn't get made around here except for potlucks and as you know--not many of those going on at this time!

Oh we love Asian Slaw--we just don't use the seasoning mix at all use vinegrette instead..but same idea...it is so crunchy and yummy....
we need delicious food now more than ever--right?

I used to love this salad, but I am not aware of gluten free ramen, so I haven't had it in years! :(

This sounds great. Where so you get sunflower seed kernels? I found them on the internet but are they raw? Are they salted? Or do you shell that many sunflower seeds?

I LOVE your blog, really enjoy reading about ranch life.

Hi Sue - thank you! I have no way to reply back to you so I am hoping you will see my comment here. I can buy the sunflower seed kernels at the grocery store. Some places offer them in bulk (our Farmer's Country Market does) and in other places, I have been able to find them by the regular sunflower seeds or by the salad toppings (ours is next to the produce). If you can't find them, I will send you some. They are usually roasted and salted, but I have also bought them raw - both will work in this salad. I just bought some today for a broccoli salad.

Thank you so much! I will do some checking at the stores here. With the coronavirus keeping us at home, we have not been shopping in any of the bigger cities. This slaw sounds so delicious. I have made another version of this but I am intrigued by this version. Again, thank you for your response. Sue

You're very welcome, Sue! I hope you are able to find them. I have another version of this salad too - it uses Napa Cabbage and I plan to make it sometime soon. Stay safe and healthy and here's hoping things settle down.
