Kicking it Into Gear

Next week I'll be chained to the kitchen for 5 days of branding, but the preparation begins days before. Menu planning and grocery list making began on Thursday:  

                         

I put my handy dandy pressure cooker to work cooking 3 big roasts. As soon as one was done, I started another one:

                                 

They will be turned into barbecue sandwiches for dinner on Monday. I'm needed at work and this is something I can leave warming in the crockpot. I'll make coleslaw, salsa, and a double batch of cookies and 5 gallons of tea on Sunday and hope that keeps the boys from going hungry.

Breakfast is at 5:30 and I ought to be able to get everything cleaned up and set up for dinner before I leave for work. I just hope its not another 12 hour day at work, because my feet need to hit the floor at 4 the next morning.

I also cooked up 6 pound of ground beef and put together a batch of Tabasco pickles yesterday:

                              

Today I hope to be in town by 7 in order to knock out the grocery list, get my baby chicks ordered, and pick up medicine for the cattle.

Saturday's already spoken for because we have a special Rancher's Select sale at the sale barn and on Sunday I'll be trying to get a head start on the rest of the week and possibly meet college girl in a town 2 hours from here to pick up dear grand-dog for a week while our girl attends a bovine nutritional convention out of state.

As crazy as things are right now, life is good and this time of year is one we always look forward to. I just feel my age a little more now than I did 20 years ago! :)

Don't you love the Insta pot?? So stinkin' handy!!! Sounds like you are hitting the ground running for next week. Always love to see your menus!!

OH Wow Lady.... Feeding a bunch of hungry men that have been working hard is such a labor of hard work and from you a bit of love! At least on my Grandparents farm. There was always help from the younger "girls" (daughters) to lend a hand! The older ones where in the fields also. Or so I have been told.

Do you slaughter and freeze your own beef for your hamburger or buy it at the store? I imagine your grocery bill is pretty high! I guess you were born to be a ranch wife! Hope your work day goes smooth. I'll be enjoying the Sabbath and sending a prayer to you.

My, my, my, but you are busy, girl! I don't like to cook that much. And all the other work you do, besides -- you wear me out just thinking about it. What are tabasco pickles? Sounds like somethin' My Cowboy would love!

It seem like it should be that time already. Take your vitamins girl.8-) And when you get a few minutes when this particular saga is done, what are tabasco pickles?

Your Tabasco pickles are one of our favorites. I gave the recipe to a friend of mine who also loves them. He added a new wrinkle, he needed some relish so he chopped (probably only a a quick touch in his food processor.) Said it was wonderful on a sandwich.

Yay for the pressure cooker! I threw dry beans and a ham bone in my over the weekend. Yum, bacon soup... {grin} Do you leave your roasts whole when you pressure cook? About how long do you go per pound? I have a roast that I'm turning into sandwiches, too (using a root beer BBQ sauce from Pressure Cooking Today). I'm curious as well on the Tabasco pickles --- might you share that recipe?

There's nothing like a good pressure cooker. I don't think folks know what one can achieve!!.
BTW, as Tonia asked, what are tabasco pickles and will you share the recipe??
