My MIL shared this recipe with me probably 30 years ago so it's stood the test of time. I wanted to serve some of her old favorites on Mother's Day because if I'm a good cook, she's a big part of that. She's shared so many favorite recipes through the years.
Granny's Corn Casserole
1 can whole kernal corn, undrained
1 can creamed corn
1/4 C chopped onion
1 C uncooked, broken spaghetti
1 C cubed Velveeta
Fresh ground pepper
*Mix everything in a baking dish. Bake at 350 for 45 minutes to 1 hour. I usually bake it covered for 30 minutes or so, then stir and complete baking uncovered.
Super easy and always a crowd favorite!

Sounds delicious! I love the dish you used to bake your corn casserole--I have one just like that--a wedding gift way back in 1975!
Interesting, I guess the moisture in the corn cooks the pasta.....wonder if it would work with egg noodles. I foresee a science experiment.

Grandkids came and trimmed branches on a tree Sunday evening so I fixed an “oven meal” including this corn dish. Big kids trimmed, little kids filled the wheelbarrow. Everyone was hungry.
