and before long, I had a beautiful set of jars filled with the lovliest shade of...syrup...yep...it didn't set. I was crushed. There is nothing wrong with syrup, but I sure did have my heart set on jam.
There are a variety of reasons it may have not set. DH has a sweet tooth, but as I was making the jam, he asked that I not make it too sweet so I skimped on the sugar and the pectin I had on hand had expired in 2012. I figured it was still good, but I guess not and syrup was the result.
So, the next time I made a trip into town, jar lids and pectin were at the top of the list and I set out on round 2.
Sealed jars were reopened. Emptied. Washed. Sterilized. Refilled. And prayed over. :)
Biscuits were made and a jar was carefully selected. Said biscuit was slathered with butter and the prettiest jam you ever saw and it's divine. Heaven on a biscuit:
Thank you so much M!

That really looks good! You are makin me hungry! Good it all worked out.
MMMM!!! I LOVE freshly made jam :D I have recently made honey strawberry and aprium. Can't wait till it's blackberry season! I found this pectin, as I too, can't stand how much sugar is needed to go into jam. ANd with it, I can use honey if I want to also. Hope it's useful to you.

Yummy!
I've had to redo batches of jam and jelly, too. Lemon juice sometimes works instead of additional pectin.
Looks delicious! Wild plumb jam is the greatest! And on home made biscuits, be still my heart!
I too learned my lesson and NEVER use expired pectin. Life is too short to remake batches of jam or jelly. Your plum jam looks really yummy.
That looks scrumptious! Yummy. It is 12:25 a.m. and I had a big dinner, but I could sure eat two of those biscuits with wild plum jam. In fact, I could eat anything with jam on it now after seeing these pictures. I'd better hurry and get to bed so I can eat breakfast in a few hours. lol
Just picked some plums yesterday! But I don't make Jam, Instead we go for jelly. I'm cheating this year and ordered a steam juicer. Now maybe my plums will be juiced instead of taking up space in the freezer along with my grapes and chokecherries!
Sounds so delightful! and what a pretty color!
