I know many of ya'll are tired of gray days, but around here they are few and far between and when they DO come around, we get pretty excited:

We've always got a deep freeze full of ranch raised beef. When we were growing our family, it seems we went through ground beef fast, but now I'm always looking for ways to use it up. This one was a keeper.
As always, I made some changes. I doubled the meat, added Rotel instead of diced tomatoes, added more Worcestershire, and sprinkled crushed red pepper flakes on top. We like spice!
Hamburger Vegetable Soup
2# lean ground beef
1 onion, diced
2 cloves minced garlic
2-3 peeled, cubed potatoes
4 C beef broth
1 can tomato soup
1 can Rotel
16 oz frozen mixed vegetables
1 Tbsp Worcestershire
Pepper
Granulated Garlic
Seasoning Salt
* Brown ground beef, onion, and garlic. Drain if needed, but we have our ground beef processed extra lean. Season with pepper, granulated garlic, and seasoning salt. Add potatoes, beef broth, tomato soup, Rotel, vegetables, and Worcestershire. Simmer on stove for 30-45 minutes. Serve with dollop of sour cream and a good french bread roll.

Hi Karin! Glad you're getting some wet, gray days. We, too, have gotten some rain after some beautiful sunny warmth. We have some fruit trees blooming and the wild flowers are making an appearance down the road aways. I love this time of year! Hamburger soup is good, thanks for sharing yours.
I make a very similar soup right down to the Rotel, and I love it! It freezes well, too.
The hamburger soup sounds so satisfying, especially on a chilly day like today. Glad you are getting some much needed rain. It's raining here today and we have had over 12 inches for the year. Daffodils are nodding their sweet yellow blossoms in the March wind and the forsythia blossoms are filling out along the limbs. Wild plum is blooming near the back door and smells so sweet! Wish you were here!!
Already copied the recipe and plan on trying it-thank you! My husband has Celiac so I'll have to substitute the can of tomato soup...maybe with tomato sauce. There are gluten free tomato-type soups out there, but they are pretty bad.
That looks perfect for the weather we're having this week. Do you spose I could make this in the crockpot? My Cowboy isn't supposed to have tomato-y stuff, but maybe we could get by with an exception once in a great while.
